Easy Protein Fix

Roast Beef Philly Wrap

Ingredients

  • 1/4 cup fat-free cream cheese, divided
  • 4 8-inch low-carb whole-wheat tortillas
  • 1 tomato, sliced
  • 1 cup raw spinach leaves, washed
  • 8 ounces lean roast beef, sliced

Preparation

  1. For each wrap, spread a quarter of the cream cheese over the surface of the tortilla.
  2. Layer tomato, spinach, and roast beef on top.
  3. Fold opposite sides of the tortilla toward the center and roll up from the bottom.

Makes 4 servings.

Coffee Bean and Tea Leaf Desserts

I always love Starbucks but I also adore CBTL especially their desserts and some pasta dishes not to mention the Moroccan Mint Tea that I always order there.

Last July 16, I met up with some of my friends for lunch and we ended up having coffee and dessert over at Coffee Bean. I didn’t order my usual tea since I am very full from our Greek lunch but I tried a piece of one of the cake orders and I really love it, my fave, the Chocolate Cake…

It was really rich and soft, just the way I want it. Here are some of the other desserts that I didn’t get to try…

Easy Chicken Burritos with Mojo

I’m in constant search of Chicken recipes because I don’t red eat meat anymore. And I admit, when you eat the same Chicken recipes over and over again, it gets old and you instantly think of red meat. I don’t want that so when I have time, I try to cook a new Chicken recipe and I haven’t done Chicken Burritos.

Ingredients
Mojo Sauce:

* 4 garlic cloves
* 2 serrano chilies, seeds removed
* 1 large handful fresh cilantro leaves
* Juice 2 limes
* Juice 1 orange
* 1/2 cup extra-virgin olive oil
* Kosher salt and freshly ground black pepper
* 8 large flour tortillas
* 1 (3 to 4 pound) whole roasted chicken, shredded
* Yellow Rice, recipe follows
* Spicy Black Beans, recipe follows
* 2 avocados chopped
* 1 cup grated queso blanco or Monterey jack cheese
* Sour cream, for garnish
* Cilantro leaves, for garnish
* Lime wedges, for garnish

Directions

Make the Mojo Sauce: Put the garlic, chilies, cilantro, lime juice, orange juice, and olive oil into a blender and process until smooth. Taste and adjust seasoning with salt and pepper.

To make the burritos: Warm the tortillas for 30 seconds in a dry skillet or on the grill until pliable. Place some chicken down the center of a tortilla and top with rice and beans, avocado, grated cheese, and Mojo Sauce. Roll up the burrito and serve topped with a generous drizzle of sour cream; garnish with cilantro leaves and a squeeze of lime juice.

Yellow Rice:

* 2 cups long-grain rice
* 4 cups water
* 2 cloves garlic, smashed
* 1 teaspoon turmeric
* 1 teaspoon kosher salt
* 1 bay leaf

Put all the ingredients into a heavy bottomed pot, stir well, and bring to a boil over medium-high heat. Reduce the heat to a simmer, cover, and cook over low heat until the rice has absorbed the water, about 15 to 20 minutes. Remove from the heat and let sit, covered, for 5 minutes. Discard the garlic and bay leaf, fluff with a fork, and serve.

Yield: 8 servings

Spicy Black Beans:

* 2 cups (about 1 pound) dried black beans, picked over and rinsed
* 3 tablespoons extra virgin olive oil
* 1 medium onion, chopped
* 1 jalapeno pepper, chopped
* 2 cloves garlic, chopped
* 1 bay leaf
* Kosher salt and freshly ground black pepper

Quick soak the beans: Put beans in a pot and cover with water by 2 inches. Bring to a boil and cook for 2 minutes. Remove from heat, cover, and let soak for 1 hour. Drain the beans.

In the same pot, heat the olive oil. Add the onion, jalapeno pepper, garlic, and bay leaf and cook until the vegetables begin to soften, about 5 minutes. Add the beans and cover with water by about 1 inch. Bring to a boil, reduce the heat, cover, and simmer for 1 to 1 1/2 hours, or until the beans are tender. Remove the bay leaf and discard. Taste the beans and season them with salt and pepper.

Yield: 8 servings

Trying Out New Recipes

Since June 17 I quit eating red meat. No pork and beef for me since then and I am still trying, really hard. I love beef and it is a struggle everyday but I am taking each day as a success already. I’m also leading my husband to eat healthier because we have to admit, if we are married and you are taking your steps to being healthier, you feel that guilt if you still see your husband take in so much fat and luckily, my husband takes the step with me, he still eats meat but avoids beef as much as possible and he eats less pork as well. Anyway because of this my cooking also changed and just recently hubby requested I try the Tomato Basil Spaghettini we had at California Pizza Kitchen and thank God it was a success…

This is just tomato, basil, garlic and olive oil. :D

Fried Lasagna

We love to eat in gourmet places especially when we are with our son, we don’t want him getting used to so much junk because I’m afraid of certain diseases that our genes have. Anyway, we love hanging out at Unit 8 Cafe in Mall of Asia, with the food we order when we are there, I need diet supplements in trimming down right after. Look at our latest favorite in that restaurant…

I wonder how they make these. I want to try cooking it when we have a small gathering at home. See all the cheese? Goodness, sinful but heavenly. Now I really have to take dieting and exercise seriously or with these food I’m eating, I will surely gain weight!

Had Wendy’s, Yay or Nay!

Because I had these this lunch today…

The veggies are no problem but the dressing! It’s like more than 200 already. HAHA…

I need to get those crash diets that work! I miss Wendy’s and just this week, I saw a friend’s Flickr account with Wendy’s food photos uploaded and had cravings since then. Must be the hormones, I have my monthly visitor this week, anyway. I went 10 minutes of walking but I don’t that is enough, I need to go on the stationary bike or else I should skip dinner which is wrong, my body will build more fats if I go hungry. Oh boy, this is surely hard work. I’m really getting younger. HAHA. :D

Aglio Olio

Last Easter Sunday, I cooked Aglio Olio for breakfast, yeah I know it’s a pasta dish and it’s heavy but we are heavy eaters especially during breakfast and with the rate that we are going I might need to visit http://www.weightlossproduct.org very soon. :D Friends were asking how did I cook it so here is the recipe…

Ingredients:

13 oz of dried spaghetti
1/2 cup of olive oil
4 garlic cloves, finely chopped
1-2 large red chillies, seeded and finely chopped
2 tablespoons of fresh parsley, finely chopped
salt and freshly ground black pepper to taste

Procedure:
Bring a large saucepan of salted water to a boil and add the spaghetti. Stir well and boil rapidly for 8 minutes, or until the pasta is al dente.

Meanwhile, combine the oil, garlic, and chilli in a small saucepan. Cook over a low heat for 7-8 minutes to allow the oil to absorb all the flavors. The garlic should become golden brown but don’t allow it to burn.

Drain the cooked pasta and return it to the large saucepan over a very low heat. Make sure it’s not a high heat because you don’t want to dry out the pasta. Pour the oil mixture over the pasta and add the parsley. Mix thoroughly so all the pasta is well coated with the oil. Season with salt and pepper to taste and serve immediately.

And I actually add bacon before serving and Parmesan cheese.
